Search for microgreens and immunity and you will find the claim everywhere, stated plainly and without hedging. We went looking for the study underneath it, across the research library we keep for exactly this purpose.
There is no study. Not a weak one, not an animal one — there is no published research testing whether eating microgreens affects immune function in anybody.
What there is, instead, is a chain of reasoning that gets repeated until it sounds like a finding. It is worth taking apart, because once you can see its shape you will notice it under most nutrition claims you read — including, if we are not careful, ours.
How the claim is actually built
Here are real sentences from peer-reviewed review papers about microgreens, quoted to show the mechanism rather than to criticise the authors:
One review notes that microgreens "help boost the immune system" [1]. Another states that ascorbic acid in microgreens "plays a crucial role... to support immune function" [1], and a third gives attention to "modulating immune responses" among their therapeutic properties [2].
Follow the citations and the structure appears:
- Vitamin C has an established role in immune function. True, well documented, not in dispute.
- Microgreens contain vitamin C. Also true, and measured [3].
- Therefore microgreens boost your immune system.
Step three does not follow. It skips every question that would make it a finding: how much vitamin C, from what portion, in whom, with what baseline status, producing what measurable change in what immune parameter. A nutrient having a role in a system is not the same as a food improving that system's function in a person who was not deficient to begin with.
Why this particular claim is so durable
Three reasons, and none of them involve anyone lying.
It is unfalsifiable as usually stated. "Supports immune function" has no endpoint. You cannot fail to support something. Compare it with "lowers fasting blood glucose", which names a number that a study could contradict.
It is repeated through citation. A review says it, citing another review, which cited a paper about vitamin C in general. By the fourth generation it reads as established because everyone is citing someone.
Nobody has an incentive to check. The claim sells food, sells supplements, and costs nothing to make. Running the trial that would test it costs a great deal and might produce an inconvenient answer.
What we would accept as evidence
Since it is easy to be sceptical and harder to say what would change your mind, here is ours. A trial feeding a realistic daily portion of a named crop to people for a defined period, measuring something specific — infection incidence, vaccine antibody response, a defined immune marker — against a control group. Published, with its methods.
Reviews of the field say the same thing in their own words: clinical trials remain necessary before health effects can be established [4]. That sentence appears in paper after paper, and it is the honest state of things.
What is actually true
Microgreens are a good source of several vitamins and minerals, and those have been measured properly [3]. If your diet is short on vitamin C, eating more of it is genuinely useful — that is a deficiency being corrected, which is a real and well-understood effect. What has not been shown is that adding microgreens to an already-adequate diet does anything to immune function.
That is a smaller claim. It is also one we can support.
Hold us to this too

We would rather publish the fact that it is unsupported and be trusted on the things we can evidence — the nutrient measurements, the growing science, our own bench trials with their conditions stated.
